A Five Masala, (Panch Phoron)

A delicious Masala called Five Masala. This Five Masala also called Paanch Phoron. It is extensively used in Bengali cuisine, Assamese cuisines and India too. It is quite the extraordinary spice. Unlike most spice mixes, Panch Phoron is always used whole and never ground.  I will be posting some of my recipes in the near future that call this spice blend.  Stay tuned!

“A Five Spice”

Ingredients to make this Five Masala (Paanch Phoron) is:

  • Cumin Seeds 2 tbsp
  • Fenugreek Seeds 2tbsp
  • Fennel Seeds 2tbsp
  • Mustard Seeds 2 tbsp
  • Nigella 2 tbsp


Combine the seeds in a small bowl. Store in an airtight container.

Depending on what kind of dish you make with these seeds, they can either be fried briefly in oil or dry roasted to coax out their rich flavors.

A Quick and easy to assemble Masala is ready to use.

All Panch Phoron seeds should be completely dry and not damp. In case you’re not sure about then dry roast the spices till just aromatic.
