

Sharing this Aromatic & Piquant Recipe of “Spicy Potato Rice”.
Ingredients that you need to make this “Spicy Potato Rice” is:
- Potato 3 medium sized (cut them into smaller pieces)
- Salt 2 tsp
- Green Chilies’ 8 slit
- Crushed Black pepper 1 tsp
- Cardamom 2
- Cinnamon 3
- Cloves 5
- Red Chili Powder 2 tsp
- Ground Spices Powder 1 tsp
- Red Chili Flakes 1 tsp
- Cumin seeds Powder 1 tsp
- Mixed Pickle as desired
- Basmati Rice 1 cup
- Onion 2 finely sliced
- Oil ½ cup
- Bay leaves 2-3
- Curd ½ cup (beat it well before use)
- Tomato 1 medium sized (Finely Chopped)
- Ginger Garlic Paste 1 tbsp
- Ghee for Frying Rice 2 tbsp
- Water
- Fresh Coriander Leaves ½ cup
Directions:
Take a sauce pan. First add Oil and heat it.
Now add onion sliced and fry them. When it starts changing it color add Cinnamon, Bay leaves, Cardamom, Cloves, Cumin Seeds powder, 1 tsp of Salt and Crushed Black Pepper into the ghee, mix well until the onion changes its’ color into a brown.
Add half of the Green Chilies’ and Ginger Garlic paste into it. Mix well not more than 2 or 3 minutes.
Now add Red Chili Powder, Turmeric Powder, Coriander Seeds Powder, Salt and mix again.
//Follow first few steps in Medium to low Flame.
Add some water and mix.
Add Beaten Curd and give it a good mix to prepare curry properly.
Now add Potatoes and tomato together and cook it for 2-3 minutes. Then add approx. half cup of water into curry and cook it on a low flame for 2-3 minutes.
In the meanwhile, take an another sauce pan. Add Ghee and heat it. Now add rice, 1 tsp salt and sauté it for few minutes in a low flame.
Now add rice into the Potato curry and water approx. 1 and ½ cup exact water. Cook it on a high flame.
When its’ water dries then sprinkle Red Chili Flakes, Ground Spices Powder, remaining Green Chilies’ and Mixed Pickle. Give it a light mix. Cover and steam cook on low flame for 5-8 minutes.
//Just rinse rice properly and add it into a sauce pan for Frying.
