Ingredients that you need is:
- Chicken 1/2 kg
- Basmati Rice ½ kg or 2.25 cups
- Tomato 1 (finely chopped)
- Onion 1 medium sized (finely sliced)
- Ginger paste 1 tea spoon
- Garlic paste 1 tea spoon
- Coriander Seeds 1 tsp
- Cumin Seeds 1 tea spoon
- Green Chilies 5 to 6 slit
- Red Chill Flakes 1 tea spoon
- Fennel Seeds 1 tsp
- Cardamom 2-3
- Whole black pepper 5-6
- Cinnamon 4
- Ground Nutmeg 1/4 tea spoon
- Ground Mace 1/4 tea spoon (a small piece approx. ½ inch!)
- Cloves 7-8
- Muslin (Malmal) Cloth
- Ghee ½ cup
- Salt 1 tea spoon or as desired
Soak rice for 15 to 20 minutes at least. If you are taking other kind of rice then soak them accordingly.
Then make a potli bag of Fennel and Coriander Seeds using Muslin Cloth.
In the meanwhile, take a sauce pan. First add Ghee and heat it.
Then add Potli bag and onion sliced and fry them like its’ color changes into light brown.
Now add Ginger Garlic paste into it and mix well. Add all Whole Garam Masalas’ (Cardamom, Whole black pepper, Cinnamon, Nutmeg, Mace, Cloves) and cook them for 2 to 3 minutes in a low flame.
Now add Chicken in it. Mix well and cook for 3 to 4 minutes.
Add Tomato chopped and Green Chilies. Mix it well for a 2 minutes on a high flame even and until you can smell its’ aroma.
Add Red Chilli Flakes and Salt into it. Mix again.
Add the Basmati rice (soaked) and Cumin Seeds. Mix gently. Add water 3 and ¾ cup exact (means 3 cup and ¾ cup) but not exactly 4 cups of water.
When its’ water dry then Cover and steam cook on low flame for 10-12 minutes.
Your Chicken Yukhni Pulao is ready to dish out!
Garnish with Coriander leaves.
